Who Needs a Diet?

Welcome to my attempt at figuring out how to live a healthy life, while not giving up things I truly love to do and eat!

Too Busy to Blog Well!

Ooops. Not so good with the photography the past few days. Set my battery to charge, then forgot to put it back in the camera. Strange how that doesn't work so well.

Tuesday Dinner was... Chipotle! Even though I had it the day before, it was okay because Kyle loves it and finally felt his mouth had healed enough for it. I got mine in a tortilla, but the same old filling:

Wednesday am I had Chobani Blueberry (yum!) before hitting the gym for a shower only.

Lunch was a big salad with turkey, red pepper, and cucumber, but no picture. Oops #1.

Snack was a hot dog sans bun for a snack with some ketchup:

Dinner was at a little sushi fusion place in town. Kyle and I were both starving because it was almost 7:30, which is laaaate for us. I didn't have my camera in my purse because originally we were going to eat at home, but decided in the end to just eat out for time's sake. Oops #2.

I got some sort of combo of teriyaki salmon with steamed rice, salad with ginger dressing, endame, miso soup, and a california roll. It was $14.00, and I got it knowing I would save half for another meal. I ate the salad first (typical iceberg) which had a good ginger dressing, then the miso soup (very tasty!), some endame, and the California roll which had very little flavor.

I was too full to eat the salmon and rice, so I took it home for another meal!

After dinner I had some read wine (2 glasses?) and watched Up with Kyle. Such a cute movie, but my goodness I cried a lot! So sentimental, but so good.

This morning featured more yogurt for breakfast:

Then I hit the gym:
  • 30 minutes on the arc trainer, weight loss setting level 8
I LOVED the arc trainer! I really felt it working my thighs as well as my core because you have to work harder to keep your balance.

I stayed on campus all day (9am-7pm YUCK), so I hit the food court for my favorite... Panda Express!

Steamed veggies, sweetfire chicken, and mushroom-zucchini blend (A "smart-wok" item).

I then settled into the library for an afternoon of hard work:

Sipping on some Diet Coke and munching on a banana:

After my 4:30-7pm class, I grabbed a burger from Checkers:

I have 1/2 the fries to Kyle. It was pretty good... I hated Checkers as a kid, but I liked it better than most other fast food burgers.

Now I am having mandatory KAT TIME. I am just going to relax in bed watching movies until I fall asleep. No school, no boyfriend, nada. Just ME!

Ready to be done...

After a four day break from school, it is REALLY hard to get back into the swing of things. But, I think that break was totally necessary given that I had no spring break and I have been on the go since last June.

Last night was EPIC. DUKE IS THE NATIONAL CHAMPION, BABY!

Before the game, I made a simple pasta sauce with this new veggie pasta:

I had about 2.5 oz of it (very tasty!) with a thrown together pasta sauce:
  • 5 chicken tenders marinated in Italian dressing, sauteed with
  • 1 jar marinated artichokes
  • 1 can no salt tomatoes
  • 2 big handfuls of spinach
  • a sprinkle of hot pepper flakes, salt, and pepper

With some roasted veggies on the side :-)

Kyle forgot to leave the easter candy at work, so I maybe had some peanut butter goodness....oops.

This morning I woke up and hit the gym after pounding an (unpictured) Luna bar.
  • 20 minutes elliptical, level 12 on random
  • 30 minutes stationary bike, level 10-12
I was starved when I got home at 11:30, and had leftovers from last night:

A little pasta heavy, but delish! I also had a diet coke... just one, and I have to say I feel better after having no caffeine yesterday and only 1/2 cup coffee on Sunday.

Snacks were popcorn, Easter M&Ms (Kyle left them RIGHT on the desk; I have no self control), and a Slenderize juice.

Now I am off to meet Kyle for an early dinner before my class tonight... blah blah blah. Have a good one!

GO DUKE!

The National Championship game is tonight... GO DUKE!

I'm really excited, and wish I had some fellow Dukies to watch with. Sadly, I'll be (hopefully) cheering them to victory solo.

I felt AWFUL again yesterday after brunch, but rose to the occasion for some easter dinner. Dinner last night was very classy:

A hot dog with ketchup and spiced up sweet potato fries. This hit the spot... hot dogs are ab fab! Never underestimate the power of simple comfort food!

This week I plan to get back on track in terms of diet and exercise; my stomach has been angry the past few days, and I think it is because of the extra candy, caffeine, and processed foods I have had in the past several days. My body has had mostly healthy, simple foods for a few months now, so eating so much crap at all once really took its toll on me.

This morning I snacked on some bunnies pre/post gym:

Clearly I need to hit up the grocery store!

At the gym:
  • 30 minutes elliptical, level 12 random
I got home and had a one egg, spinach, and provolone sandwich with some orange slices:

Then I ran some errands, did some major cleaning, as well as a few craft projects. I forgot to take pics; will post soon!

Lunch was Chipotle!

Rice, black beans, steak, corn, tomatoes with guacamole.... they didn't hear me say "guac on the side" and I got a huge slathering of it in my bol... I tried to scrap a bunch off. I have to say, another thing I love about Chipotle is that they purchase their produce locally, meaning it is not only more healthy and fresh but also supportive of local farmers. Win win!

Now I am sipping on a beer while doing my taxes. AWESOME!

Speaking of beer... one of my new favorite blogs is The Healthy Tipping Point. Caitlin is an awesome vegetarian athlete who is a lover of beer! In a cookie cutter blog world of people who eat rabbit food and shun alcohol, it's nice to see her embrace a true love of hers, brewskies!

Have a happy Monday!

Rested!. yf

I have had a very nice few relaxing days... sadly not much time with Kyle. Our schedules didn't match up at all.

Thursday afternoon I gave my presentation, and snacked on a snickers:

I sort of wish I hadn't; not because they are so bad, but because I should have know I was getting a lot of Easter candy in just a few short days.

Thursday dinner was spinach and roasted veggies; no pic! Then the last of the leftover pizza.

Friday am I took Kyle over to Fairfax to get his dental surgery. Another pictureless event... I had McDonalds for breakfast. I have not done that in MONTHS, but it was Ky's last meal so I gave in :-)

Friday afternoon I made some more yummy roasted veggies:

Parsnips, carrots, purple potatoes, butternut squash, red onion.

And I had mac and cheese + peas for lunch, and it made me sick! I threw up and felt gross the rest of the day.

So, for dinner I incorporated some ginger into my meal, which really helps settle my stomach. I sauteed/steamed red cabbage, mushrooms, and shredded carrots in a ginger/shallot/lime mix. It was basically the larb gai from last week sans chicken:

It was tasty, and I crashed shortly after.

On lazy day #2, I woke up ready to hit the gym! My body still felt tired, but mentally I was angry at having only worked out one day all week. So I had a long leisurely workout:
  • 30 minutes on treadmill; 4.0 incline at 4.0 mph!!!! new speed record on such an incline
  • 20 minutes elliptical; LEVEL 12 random!
I was very proud of myself! So I celebrated with a spinach/feta wrap from S*bucks and a venti coffee; no milk or sweetener:

I then set to work on some art projects (to be discussed when they are more in motion!) while Kyle was at work. I started feeling sick AGAIN, and though maybe I need straight carbs.

Bad idea.

I went to Jason's Deli and got some veggie pasta:

I can't tell you the last time I had white pasta.... it didn't help much. I mostly ate the veggies, and one piece of foccacia. And a little fro yo:

After lunch I did some more sketching (excited for this project!!!!), and my stomach finally chilled the ef out.

Good thing, too, because one of my greatest friends from college, Ashleigh, was in town!

Disco much?

Ashleigh was my big brother in my fraternity, Phi Sigma Pi. We hung out a lot over my three years at the College of Charleston, and WE HAVE NOT SEEN EACHOTHER IN ALMOST THREE YEARS!

Ashleigh drove up with our other friend, Erin, to visit ANOTHER friend Amy in Annapolis:

That is me in the center, with Ashleigh to my right and Erin to my left. This was right before a semi-formal, with our other fraternity "brothers" Laura and Kate.

Crazy times!

Me and Ashleigh sandwiching Kate :-)

You could say I was a bit of a goofball in college. Seeing Ashleigh and looking at these pictures makes me really miss my friendships from college; I feel like I have changed a lot from certain things I really liked about myself. I miss having girlfriends and not feeling judged all the time. Sometimes I wonder if I'll ever find as many nice, caring, wonderful people in my life again. So far, in DC, I have not found many. I actually have not felt very comfortable around the people I have met here except for a few; maybe it's a southern thing?

But at least I got a few hours to re-connect with Ashleigh. It was a gorgeous DC day!

So pretty! And you can never get enough of the dinosaurs in Natural History!

After too short a time, I had to head back up to CP for the NCAA Final Four matchups! I started to feel sick AGAIN on the metro (likely motion sickness), so I had some grease:

And settled in for some EXCELLENT games. I am satisfied with the Butler > MSU win, and overjoyed that Duke STOMPED West Virginia.

I don't know if anyone who reads this follows basketball, but Huggy Bear can kiss my grits. He is the sleaziest, slimiest coach I can think of, and I don't have a lot of respect for him due to his lack of respect for other teams and NCAA policies. You could say he is a giant wanker.

I am hopping Duke can take it all home tomorrow! My big bro and his wife are in Indianapolis for the final four/championship game... must be exciting!!

During the Duke game I had one beer (Ky insisted), and some sauteed mushrooms+ onions and a small serving of black lentils:

Plus some Cherry 7-up... it looks pretty with my nails! I only drank 1/3 of that though.

This morning was EASTER! Ky was ab fab and made me an Easter Basket and got me a new toy... Pancakes the bunny!

My basket has lots of PEANUT BUTTER candy, and a bottle of Pinot I am going to save until Ky can drink again. He's so sweet :-)

Needless to say, a LOT of easter candy will be eaten today. Whatever survives will be sent to work with Kyle tomorrow so that I won't be tempted.

Breakfast was the Silver Diner because everything else was closed for Easter. I had 1/2 mug of coffee:

And a vegetarian griddle:

It had eggs, potatoes, zucchini, squash, spinach, and too much cheese. I also had a piece of rye bread with butter.

Now I am sitting here in a sugar coma, determined to enjoy my last relaxation day before I'm back to work tomorrow. Sigh. Not a lot to do here on a holiday, and poor Kyle has to work again :-(

Done done done!

Oi vey.

I submitted my draft a few hours ago, and threw a presentation together for my class at 4. Now I need a break!

Dinner Tuesday:

$3.95 for a mushroom cheeseburger with fries at Pizza Roma... yum!

Wednesday Breakfast:

2 scrambled eggs with hot sauce and a banana.

Wednesday Workout:
I was so tired and sleep deprived, I didn't make it to the gym. I thought sleeping in and leisurely working on my paper would be best.

Wednesday Lunch:

Roasted veggies! Butternut squash, russet potatoes, red pepper, red onion, white onion, carrots, parsnips. I LOVE ROASTED PARSNIPS!

I had a big serving on a bed of spinach:

Wednesday Dinner:
Pizza from Ledo's (about 4 squares) + more veggies on spinach

The pizza was okay; it had peppers, sausage, and mushrooms, but was not cooked all the way and had too much sauce. Meaning it fell apart when you tried to pick up a slice.

Plus... some beer. I know, I know. That didn't last long! But it tastes so good, and I was so stressed...

Thursday Breakfast: Luna (no pic!)

Thursday Workout:
  • 30 minutes elliptical... I didn't have time for more!
Thursday Lunch:

Leftover pizza... no worries, I only had about 1/2 of these leftovers.

Now I am twiddling my thumbs, feeling the stress melt away. I am taking a much needed paper break for a few days before I go back to researching, editing, and incorporating my reader's notes.

Girl needs a break! But first class, then Date Night :-)
