Who Needs a Diet?

Welcome to my attempt at figuring out how to live a healthy life, while not giving up things I truly love to do and eat!

My Drug

Diet Coke Diet Coke Diet Coke.

Let's not even talk about how much soda/coffee I have had since I woke up yesterday.

I picked a bad time to curb my caffeine addiction. My paper is driving me nuts; the rough draft is due 4/1 (self imposed time of 3pm), but I will be working on it hard core with and without my readers' notes to get it all done by 4/23. It's gonna be a looooong 3.5 weeks!

Monday Breakfast:

Monday Morning Snack:

Monday Lunch:

Sauteed mushrooms, onion, carrot, red pepper, red cabbage, spinach and no-salt canned tomatoes.

Monday Afternoon Snack:

Turkey sausage... needed some protein!

Monday Dinner a la Ky:

chicken + peppers/onions + cheese quesadillas. I ate the filling out of these and another unpictured one. Tasty, but messy!

Monday Dessert:

Strawberry shortcake roll... mmm.

Tuesday Breakfast:

Tuesday Lunch:

Roasted red pepper, onion, carrots, parsnips, purple potatoes on a bed a spinach (roasted in evoo, salt, and pepper).

Now I am finishing up a presentation for tonight, and working on my paper. BLAH.

No workouts so far this week, but I want to devote more time to working. I do plan on hitting the gym tomorrow morning, though.

Some good news.... the size 8 jeans I bought 3 weeks ago are super loose now!

At least something things are working out even if other are crappy!

Also, some announcements:
1. I am not going to drink alcohol until next weekend.
  • I want to focus on school and get quality rest.
  • Also, Ky is having dental surgery this weekend, so I don't want to rub it in while he has to recover sans liquor.
2. I am going to try to drop caffeine except for one drink a day (a small soda/tall coffee)

Keep it real!

Bad Blogger!

No pics for today... oops!

Late start, but Ky came with me to the gym today! While he biked, I hit the elliptical:
  • 30 minutes, level 10 on random
I thought we were going to eat at home, so I left my camera behind. Instead, we hit up Noodles in town. I had cucumber and tomato salad with mac and cheese (couldn't help myself :-))

Dinner was the last of the rice and roasted veggies with 1/3 an avocado on top.

Now I am watching Duke (hopefully about to see them win!) and working on my paper.

Better post tomorrow; I promise!

Doom!

Quick post... last fun night for a while before I become a slave to my seminar paper.

Friday Breakfast (couldn't heeeeeelp it!):

Friday Gym:
  • 30 minutes elliptical, level 10 on random
  • 30 minutes bike, level 13 reading The Tenant of Wildfel Hall :-)
Friday Lunch:

So good reheated! There was extra lab gai juice in the container that steamed the veggies as it microwaved. Also, another cupcake... don't judge! I worked out hard that morning :-)

Snack:

Another cupcake. Leave me alone.

For dinner I got all dolled up because I was bored:

No, I don't have cupcake frosting on my lip. Just camera glare on my gloss.

Dinner was Italian at Ledo's.

  • rum and diet coke
  • Italian vinaigrette dressing... only used on container of it
  • toasted raviolis... I had only one because we wanted to take it home for later
  • 1 piece of garlic bread
  • 1/2 order of penne with alfredo sauce and veggies... I went with the half order for portion control. They didn't dump sauce all over it (plus!), and I ate all the veggies first. That way, I filled up on that not carbs. I only ate about 1/2 the pasta and took the rest home with Ky's lasagna and our toasted raviolis.
After dinner Ky and I settled in to watch some NCAA play... YES! After a while, I had a few vodka cocktails mixed with my Slenderize Fuze. And, I had three more toasted raviolis for a half-time snack :-)

This morning I woke up and ran some errands; I was not hungry and was not feeling a workout so I skipped breakfast.

We grabbed chipotle for lunch:

Black beans, steak, veggies, corn, and tomatoes. Yum! And a Venti iced coffee:

Today was a lot of fun! We went down to the National Mall to walk, explore, and see an Imax 3-D movie.

It was BEAUTIFUL outside!

Plus, it was Kite Day:

Jason and Lisa joined us:

We got in a pretty nice 4-5 mile walk through China Town, the Mall, the Tidal Basin, and the TJ memorial. Ab-fab day!

We also got a snack around 4 before the Dinosaur 3-D movie:

I needed a little greenery, and I split the PB with Ky.

When we got home at 6:30, I was STARVED, and I immediately grilled a wrap with a scoop of roasted veggies and a slice of provolone, with rice and more veggies with avocado on the side:

It looks rice heavy, but that was a 1/3 cup on top of a bed of roasted veggies.

Now I am sipping on a brewskie, trying to stretch this night out... I don't want to write for the next four days :-(

Yowza!!

It's almost the weekend... I CAN'T wait!

For breakfast yesterday I had an egg and egg white with cholula and lightly sauteed onions so they were crunchy:
Also, another skinny water. I liked this one, too!
Yesterday morning I still felt a little not-so-great from my headache troubles on Tuesday. I decided to skip a workout, and just shower at the gym (because we STILL DO NOT HAVE HOT WATER. Apparently I am bad luck because the landlords were never this bad until I moved in!!!). I am, however, planning a Saturday workout to make up for it!

The weather was lovely; in the mid-60s. I settled in with an iced coffee (un-sweetened with a pour of skim milk), and a banana to do some work on a terrace in the heart of campus.

After a few hours, Ky joined me for lunch. We food-courted it up, and I got my favorite... Panda Express! I know, I know. Bad News Bears. But it's soooooooooo good!

Veggies (lots of broccoli!), sweet fire chicken, and lo mein. Plus water to drink.

I was starting to resemble a tomato after sitting in the sun, so I went home to finish my work. While there I tried another Fuze:

This was pretty good; I prefer white tea WAY more than green tea. Green tea leaves a filmy feeling in my mouth! However, this is more caloric than the Slenderize Fuze's I've been drinking. I had about half the bottle over the afternoon, and accidentally let the rest get warm so I tossed it.

No problem... I had a Sapporo to drink while I cooked our Asian dinner.... Lab Gai!

This is a spicy lime chicken dish I love to get at Thai restaurants. It's VERY healthy, and is made almost entirely of natural ingredients. It is so spicy, you need to add a lot of veggies to help absorb the spice. Not to mention, red pepper flakes are very good for you (in moderation). Healthy goodness.

Lab Gai
Ingredients
  • 5 shallots, minced
  • 1 can of water chestnuts, quartered
  • 3-4 slices of fresh ginger, minced

  • 4 Tbsp fish sauce (found in Asian section of most chain grocery stores)
  • 4 Tbsp lime juice (you could squeeze your own limes, of course)
  • 2 Tbsp red pepper flakes

  • 1 lb. THIN SLICED chicken breast, minced/cut into tiny pieces

  • 1/2 red cabbage, halved and then cut into thin strips; rinse well
  • 1/2 bag of carrots cut into bite size pieces
  • 2 heart of romaine, washed and cut
  • green onion, sliced (for garnish)
  • fresh mint leaves (for garnish)
  • lime wedges (for garnish
Directions
1. Mix shallots, ginger, chicken, fish sauce, red pepper flakes, and lime juice together
2. Heat 1 tbsp oil in a wok or skillet; cook chicken mixture through

3. Place a scoop of chicken on a bed of romaine, carrots, and cabbage

4. Garnish with green onion, mint, and limes

THIS WAS AMAZING! It tasted JUST like the one I had at Chef Secret last week. A keeper recipe for sure. It takes a while to prep, but less than 5 minutes to cook. This made about three servings.

*Note: the recipe is from my looking at about 10 recipes on line, and going with my cheapest options for ingredients!*

The evening was spent watching Beavis and Butthead on DVD (ah, memories!) and sipping on champagne. The champagne of BEER that is ;-)

This morning I had a strange breakfast; a veggie burger and a skinny water:

Strange, but good fuel for the gym:
  • 30 minutes elliptical, level 10 on random*
  • 30 minutes stationary bike, level 13
*I liked the elliptical today! I put it on a higher level and went at a slower pace; much preferred to a lower level, faster pace! This felt much more my speed and I could really feel a burn.*

I packed a ton of food to have on campus with me today!

Turkey on an Arnold's thin with 1/2 a laughing cow herbed cheese, spinach, and red peppers:

Then a banana, carrots, trail mix, and a luna since I wouldn't get home until after 7:

I ate ALL OF IT. I burned about 500 calories at the gym today, and I went through all my food by 6:30pm except for the Luna. Even though I would be home for dinner around 7:15, my stomach was so loud I owed it to my classmates to eat it.

I came home feeling satisfied but ready for a small dinner; however, my honey had made an amazing dinner too good to resist, with a surprise dessert:

That would be pork tenderloin, brown rice (cooked with carrots!), and a medley of roast purple (!) potatoes, red onion, butternut squash, and red peppers. This was delicious.... I stuffed my face despite not being hungry; probably not the best idea. But it gets worse.

I have been wanting, needing, DESIRING something sweet for a few days now, specifically a cupcake.

I had the chocolate one with blue frosting in the back. YUM. Thanks, honey!

I am now watching NCAA play (love love love!), while sipping on a pom mocktail:

It's about 1/3 cup straight pomegranate juice mixed with soda water. Mmm mmm good!

Alright, I'm off to do a bit of work before hitting the sack!
