Who Needs a Diet?

Welcome to my attempt at figuring out how to live a healthy life, while not giving up things I truly love to do and eat!

Uhg. I don't want to go to class

Last night Kyle and I ordered Thai, and I had my usual, the veggie delight:
I didn't get any protein since they are pretty sparse there, but I did use 1/2 my container of rice. Yum! After that I spent the rest of the night reading for class. It's pretty cool; this is the first class where we are just focusing on children's lit and not articles. This week I read:

They were all good; Slam! and Does My Head Look Big in This? are both chapter books for high schoolers, and I would consider using them if I taught that age group. Emma's Rug is a really cute picture book for about 2nd-3rd grade. I'm looking forward to talking about strategies for these!

I can't believe I read all three of those in just over 24 hours! Whew!

This morning I had an old stand-by I dug out from my pantry:

And had a stellar, loooong workout:
  • 20 minutes elliptical; level 8
  • 25 minutes bike; level 8
  • 25 minutes treadmill; 3.6 mph on a 4.0 incline
It was about 10 minutes longer than I ever have done before, but I was reading Slam! and was trying to finish it up. Several hours later, my legs are really feeling it!

For lunch, I got a pre-made sandwich in the Union since Ky and I have yet to make it to the store:

It was a curry chicken salad sandwich, and was actually pretty good. It had way too much wrap on it, and I pulled quite a bit off. But it was just chicken curry with lettuce, no rice which was nice.

While in the library I had a Naked and 1/2 a pack of trail mix:

After a few hours freeeeezing in the library, I had a meeting then met Kyle for an early dinner at Noodles. We split the pot stickers:

I was feeling full after that, but finished my cucumber/tomato salad for veggie intake:

I only had a few bites of my Bangkok Curry with shrimp:

So I took almost all of it home:

At least I have lunch for tomorrow :-)

Now I am off to my 7:15-9:45 class.... I like the class, but hate the timing. Who wants to be on campus THAT late?! No one!
