More than half-way through the week... which means it is almost time for me to head down to my parent's house in NC on Friday!
Today I was still sniffle free, so I headed to the gym after eating another new Luna:
It was very fruity... but very, very tart. I had to have a glass of milk with it! Otherwise it was really chewy; good texture.
At the gym I was BUMMED to find out I forgot my iPod. So, I lost a lot of motivation. It's really hard for me to break a sweat without some loud, fast music. I got on a treadmill near a gym speaker, but I could still hardly hear anything. I stuck with it for 30 minutes, but only because a treadmill forces you to go a certain speed. If I had been on an elliptical I would have been slo mo fo sho'.

That was all I could muster sans music.
Once I got home, I was still cranky, and since it was only 11am I made half my lunch:
A repeat of yesterday... brown rice soaked in chicken stock with one TJ's patty and chopped tomatoes.
I planned to have a salad for an early afternoon snack to balance it out, but I never got hungry!
At 5pm, I did have some trail mix:
I felt it was too close to dinner for anything else. I ate them after I arranged my super-buy:
A dozen long-stem roses (any color!) for $2.99 at Shoppers! Yeah, they are a little old because they are leftover from Valentine's, but come on! $2.99? You can't beat it!
Dinner was reeeeaaaaalllly good tonight. Kyle and I buy pork tenderloins every once in a while, but a lot of the marinated ones are super high in sodium; hence why they are a rarity. This week, however, we decided on a whim to get a plain tenderloin and cook it in the crockpot with a low sodium marinade.
We settled on Good Housekeeping's new line of marinades, the Black Cherry Balsamic BBQ glaze. Sorry for lack of photo, but we tossed the bottle before I could and the website has no stock photos!
We let the tenderloins (the package contained 2, surprisingly!) marinate in one whole bottle plus 1 cup of water for TWO days.
This morning we set it to low in the crockpot, and after only 6 hours they were done and we set it to warm. It was so tender, it pulled very easily:
The pork wound up having a mildly sweet flavor, but it was very light. It was very tender, like a healthy pulled BBQ pork.
On the side we used one of my favorite rices:
I bought this once and my dad was so enthralled with it he almost didn't let me take it back to DC with me! The nutrition is THAT good in terms of sodium :-) Instead of H2O, we cooked it in low sodium organic beef stock with 1/2 tbsp of butter:
We also had broccoli sauteed in 1 tsp (yep, a teaspoon!) evoo and a pinch of minced garlic and black pepper:

I only had a little bit of pork so we would have enough for leftovers. But I had seconds of rice and finished off the broccoli!
Kyle also selected a delicious Rioja to have with our dinner:
It was very strong at first sip; strong as in it hit the front of my mouth like a brick wall! But after another sip or two, my mouth adjusted and it is very spicy and lingers on the palate.
Off to watch Jesus Camp, have a good night!
