Quick recap:
Saturday dinner was more asiago crab mac and cheese, with some Andre for good measure:
Followed by more Mexican Dominos, and a rum concoction a la Chris:
Nick had made some pulled pork BBQ, but I'd had dinner a few hours before, so I just had a bite:
Sunday was gorgeous when we woke up! Since the snow had stopped and the sun was out, the entire neighborhood looked gorgeous... I wish I had taken pictures!
We slept in again, so we had a hearty breakfast, and I munched on a banana while I cooked:
Today I made 2 eggs + 2 egg whites mixed with a TON of Cholula, and a handfull of chopped grape tomatoes:
So pretty and colorful! I love using Cholula instead of other spices when I cook eggs because it is quite flavorful, but low in fat, sodium, and calories. I used to douse my eggs in salt, but I don't even do a sprinkle if they are Cholula eggs!
Then I made a yummy mushroom, onion, and soy chorizo scramble... with lentils!
Guys... this was sooooooo good. I am 100% in love with soy chorizo! Forget sodium, this stuff is awesome! You don't even need to oil the pan :-)
I downed this with a huge glass of milk, and wound up being too full for my yogurt after all!
I got some exercise when Kyle and I went on a nice 2 mile walk to get caffeine, and I wound up with a can of regular coke (no photo!).
When we got home, the boys played video games and we snacked on some pizza, I had two little pieces:
For my super bowl dinner, I made a huge salad of greens, tomatoes, green pepper, and bruschetta/hummus dressing... everyone else had pizza, but I was starting to feel like I had not eaten anything healthy or nutritious in days:
I sipped on some red wine, and then had more of Chris' beverage mixing skills (vodka this time, I think?)
At half time, Kyle and I decided that it was time to finish the asiago mac and cheese:
I shredded some more cheese and added chopped tomatoes before baking two little ceramics at 350 for 15 minutes. Soooooooooo goooooooood. A real recipe keeper! I am very upset that it is gone, but my waistline is probably okay with it ;-)
In the spirit of over-snacking, I had a bite of a homemade pretzel dipped in honey mustard sauce, and a bit of leftover pizza.
But that's okay, because after sleeping in and having today's lunch ( grilled peppers, onions, and chicken sausage with multigrain pilaf):
We shoveled the driveway and cleaned off our cars for 1.5 hours. I got a serious upper body workout, as well as some cardio high-stepping through 24in of snow to get around our yard. I am definitely feeling it a few hours later. And here I was mad that I didn't make it to the gym....
After that I had a banana:
And then we went for another round at the grocery store. Luckily it was not so packed, and we got in and out quickly. Sorry for lack of photos of our trip! We had an early dinner at Chipotle:
Black beans, corn, tomatoes, steak, and a big scoop of guac and a diet coke. I know, I keep saying I want to break the Chipotle addiction, and Kyle had a good argument in that it is right by the grocery store. And he had a severe hankering for it.
Now we are settled in, crossing our fingers that we do not get another 10-15 inches tomorrow. I hope we don't; I feel like our lucky streak with power is not going to last through two more storms....
