I have not forgotten about blogging, but after writing like crazy since Monday, the last thing I want to do is write my blog! Tooooo muuuch going on for spring break!
Quick Recap:
Monday breakfast, a Luna:
Monday lunch, a chicken salad sandwich (ate half, gave the rest to dad!) and split a vanilla something or other (not creme brulee) from Piedmont:
Monday dinner, spaghetti squash with chicken sausage, green peppers, onion, mushrooms, no-salt diced tomatoes, and 1/3 jar vodka sauce:
Monday exercise:
42 minute Gaiam pilates cardio DVD $2.99 at Marshalls. The 30 minute pilates section was nice because it was simple, felt fast, and really worked my core. However, the 10+ minute cardio part was a waste.... there were just 3 moves that you did over, and over, AND OVER again! Three moves is too few for 10 minutes! Will do the pilates, not the cardio, again!
Tuesday breakfast: Luna bar, unpictured.
Tuesday lunch: chicken tortellini with 1/2 cup vodka sauce and salad with tomatoes and balsamic
Tuesday afternoon, coffee and Ice Dream from chic-fil-a:
Tuesday Dinner, Moroccan Chicken a la Dad:
It consists of dark meat chicken, carrots, dried apricots, chickpeas, and lots of spices over cous cous. I really like this; the only thing I would change is using Moroccan couscous instead of tiny cous cous. The recipe was really good, and had no added sodium in it!
Tuesday Workout:
- Entire Elle Toning DVD
Tuesday night, lots and lots of caffeine. I was up until 3:30am writing.
Wednesday breakfast, banana and blueberries:
Wednesday lunch, last of chicken tortellini and vodka sauce:
I LOVE how that is a serving size!!!!
Wednesday Snack, Bojangles!
Wednesday Workout:
- brisk, 2 mi walk
Don't worry... I got back from Thai a few minutes ago, but didn't upload the pics yet. I attempted to make up for my lack of greens today!
Now off to relax before writing begins again tomorrow!
