Home Sweet Home!

I am happily blogging from the living room of my parent's house, after a nice supper, a DUKE ACC CHAMPIONSHIP WIN, and playing with the pup :-).

But back to yesterday. We were off to a late start, and had trouble figuring out food in the morning, so we went to Chic-fil-a for lunch while we ran errands:


Kids meal with a small fry. I finished it in the car in between errands.

However, after NO BREAKFAST, and eating so late, I was hungry again around 3, so Ky ordered some sushi:


Veggie combo... the avocado rolls and oshinko rolls were flavorful, but the cucumber rolls were pretty drab so I used 1 tbsp soy sauce. I know, I know... not good, but I rarely use it!

Then dinner was straight veggie goodness! Spaghetti squash with a low-sodium turkey veggie sauce.

Ingredients
  • 3/4 lb. lean ground turkey
  • 1 can no salt diced tomatoes
  • 1/3 jar vodka pasta sauce
  • 2/3 jumbo white onion
  • 1 red pepper
  • 1 container portobello mushrooms
  • 1 bag large leaf spinach
  • 2 tbsp Italian seasoning
  • 1 spaghetti squash
1. Set turkey to brown in skillet with 1 tbsp olive oil and italian seasoning


2. While turkey cooks, coarsely chop all veggies

3. When turkey is browned, add in onion and cook until translucent
4. Then add in mushrooms, and can of tomatoes (with juices) and vodka sauce. Cook through.

5. When squash is cooked and gutted, add in spinach and cover. Let steam 5 minutes.
6. Stir in spinach, and serve over squash/pasta

Spaghetti Squash
1. Freeze squash for 1-2 hours for easy cutting
2. Preheat oven to 350
3. When squash is but in half, remove all seeds/guts


4. Place face down in a baking dish with 1/2 inch of water
5. Cook 30-40 minutes or until skin pierces easily with a fork
6. When squash is cooked, place each half (one at a time) in a bowl, and use a fork to scrap out the "spaghetti"

Saturday was a fun night out with a lot of our friends. We tried to go bowling, but wound up at Dave and Buster's due to the long wait for lanes.

Madness! There was basketball, boxing, horse races... lots of fun! I had two blue moons:

This morning, Ky and I hit the Bagel Place for breakfast. I was not planning on getting food at the airport, so I wanted something substantial, so I had a sausage and egg sandwich with provolone on a whole wheat bagel:
I didn't eat the rest of the day until I was home, and I snacked on some trail mix:
Then dinner was grilled honey-ginger salmon with roasted potatoes and asparagus topped with tomatoes:



Plus a BIG handful of chips while my Dad and I cooked:

Now I am relaxing with some vino before starting my self-imposed work week! Excited to detox in Durham this week!!
