I'll get to the title of my post in a bit....
So, this afternoon was productive but not in terms of school work! I finished a book and took a nap. Excellent!
At about 1:30 I was hungry again... I really thought that the lentils and avocado in my salad would curb any hunger until at least after 3, but no such luck! I wonder if part of that is because unlike yesterday, when I barely felt like snacking, I went to the gym, and exercised 15 minutes longer than usual today. Hmm.
So, I had one piece of TJ's tuscan bread, with about 2 tbsp of TJ's Bruschetta topping:
It was sooo good; it definitely took care of a carb craving I was having!
At about 5:30, Kyle got home so we got to work on dinner. Tonight we decided to use our remaining chicken sausage to make kebabs on the grill. And when I say grill, I mean the Foreman Grill (The Lean, Mean, Fat Grilling Machine!). You see, our house is somewhat falling apart at the seams.
The weekend before last, our stove went out. We have an ancient gas stove in our house, and one of our roommates turned on a burner to light it, but after the flame didn't start he could not turn the burner off. that means gas was leaking out beyond our control. After fiddling with it for a few minutes, we discovered that two of the gas lines were botched beyond repair. Awesome. So, we unhooked everything and it is setting there, reminding me of how much more amazing scrambled eggs, pasta, and steamed veggies are now that I can't have them :(

The landlord DOES know about it, but has not yet let us know when or IF they will replace it. Ridiculous! Until then, we have only the microwave, the Foreman, or the actual grill to cook with. Lame.
Anyways.... as we cooked we snacked on TJ's pita chips, my avocado spread, and the remaining bruschetta
Can you tell we shopped at TJ's this week? It's funny, I've noticed a lot of people mention if the ingredients they are using are from TJ's, so I guess I do it out of habit. But, isn't it funny that if someone buys something that is store brand from Harris Teeter, or Shoppers or something they don't mention it? Anyway...
This is what we used for dinner:
- 1/2 large white onion
- 1 green bell pepper
- about 1.5 cups mini bella mushrooms, cut in half
- Italian salad dressing
- 3 sun-dried tomato chicken sausages
- TJ's pre-cooked fried rice with mushrooms
First we cut up all the veggies into bite size chunks, and sliced all the sausages up into rounds (we definitely had too much sausage, I would use only 2 next time). Then we alternated each item on skewers, and laid them on tin-foil. I used a pastry brush to put a light layer of italian dressing on each skewer before folding up the foil into a little pouch. We were able to fit three skewers in a pouch to go on the Foreman one pouch at a time. They took about 7-8 minutes to cook, and we wound up with 6 little skewers.
We served them with ~2/3 cup fried rice, and a little side of halved grape tomatoes drizzled with balsamic vinagrette and fresh ground pepper:
Mine were definitely more veggie-laden than Kyle's. Last week we got the same brand of chicken sausages but in the jalapeno flavor (which are AWESOME), but this week we got sun-dried tomato by accident. They aren't bad, but a little too sweet for my taste. however, using Italian dressing as a marinade did help perk them up a bit.
I feel very full right now! I liked this dinner, and it was really easy to cook on the Foreman and even easier to clean up (just toss the tinfoil!).
Right now I am going to find another book to read to bide my time until GREY'S comes back tonight. I loved the first few seasons of that show, but feel like it's been off track since Season 4. Hopefully the rest of this season picks up!
