Busy 24 hours last since I last posted!
Kyle came home early from work, and 5:00 we popped open a bottle of Gumdale pinot grigio. It was okay, but it was very acidic tasting.
I also had a small handful of TJ's pita chips... seriously, Chipotle kept me very full all afternoon!
Then it was time for dinner. Kyle bought two gorgeous salmon filets and a pound of jumbo shrimp to grill outside. For the salmon I made a quick marinade of:
- 1/2 diced white onion
- 1 minced garlic clove (I used fresh garlic instead of jarred)
- 3/4 of a squeezed lemon ( I would have used more, but we had only 1 lemon and no lemon juice)
- 1 tbsp of lemon pepper seasoning (most recipes called for fresh pepper and the zest of one lemon, but I went with the seasoning since Kyle had already bought it specifically for this dinner)
- 1/4 cup of EVOO (extra virgin olive oil)
I mixed it all up and poured it over the salmon steaks to marinate in the fridge for about four hours; flipping once to make sure they were well coated.
The shrimp were peeled and put on skewers, then brushed with a mix of melted butter, garlic juice from the jar, and a tsp of cajun seasoning.

On the side, I used another TJ's staple of mine... pre-cooked multigrain pilaf mix!
I cannot tell you how much I love this stuff, of all their pre-cooked rices and grains, this is my absolute favorite! Especially with a little of Our Lady Cholua hot sauce mixed in!
The finished product:
It was DELICIOUS! I am not a big lemon fan, but it was very very subtle tasting on the salmon. I think that is because I used too little lemon juice compared to olive oil. But the salmon was nice and flaky, and the shrimp had a nice spice to them. Kyle thinks that everything was slightly overcooked, but that might actually be my fault....
I was carrying a plate of salmon outside to the grill and I tripped on the back steps!!! I must have just missed the last step (it was very dark out there), and I landed on the left side of my foot. Amazingly, no salmon was spilled, my foot was seriously hurting even after I got back inside to inspect the damage.
Needless to say, we had no veggies last night because I couldn't very easily get around. I poured Kyle and I each glasses of Malbec from one of our favorite wineries:
This was a new Malbec of theirs we had not tried from Patagonia. I only had about a sip during dinner because we were busy trying to figure out 1) what to do about my ankle, and 2)if i couldn't walk, how would we deal with our housewarming party tonight? And during that discussion, I felt it was more important to get intermittent bites of salmon and shrimp than sips of wine.
After dinner I elevated and iced my foot for a while, and ultimately decided I could handle hobbling over to Jamie's apartment. Somewhat of a big mistake... we parked pretty far away, and I walked it along with Kyle and our friend Nick. It was seriously hurting and throbbing by the time we got to Jamie and Holly's, but once I was sitting it began to subside.

They had several types of cookies, pastries, fruits with whip cream, and Jamie's specialty chocolate covered oreos. THEY ARE AMAZING! They are just regular oreos dipped in dark chocolate, but Jamie has that magic touch. Since I was not exactly mobil, I had only one oreo cookie. They also had a nice selection of drinks, and I had one glass of white wine and one glass of champagne.
Afterwards, Kyle and I headed home to our ab fab roommate, Chris. None of us were tired, so we stayed up playing X-Box and watching South Park (classy... I know!). Once home I had a small glass of the Phebus from dinner, and a Killian's Irish red with the boys.
Then, I crashed!
This morning, Kyle and I decided we wanted REAL breakfast; no more bagels! But since we are STILL without an oven, that meant getting our homefries elsewhere. So, Kyle went down the street to get breakfast to go from our neighborhood pizza restaurant, Pizza Roma.
No... I'm not kidding. They had a pretty good breakfast for less than $5:
Kyle got me two scrambled eggs, home fries, toast, and sausage (I traded a sausage for a piece of bacon!). I had half of the eggs, 3/4 of the home fries, 2 pieces of toast, the sausage and bacon. And, yes, the Cholua was bountiful :-)
Now it is almost 4, and I am still full from breakfast!
I'm off to ice my ankle for a bit, and then Chinese is on the forecast for dinner!!
